


Swallowtail Preserves
I moved to Suffolk in 1969 and was educated at Culford School and Nottingham University. After my retirement from local government in 2022, I decided to pursue my passion for preserving as a business. Many of my ingredients are sourced from my family on the Norfolk Broads, where the rare Swallowtail butterfly can be found. I also source ingredients in the Mid Suffolk area.
I began making chutney in my teens, inspired by the new wave of Indian cookery programmes on the television. My father loved spicy food and so do I, so many of my chutneys have a chilli kick.
